Chef Chris Koetke Looks to Make Restaurants More Sustainable

Fairbanks, AK – Culinary arts schools are not usually thought of as hubs of research and development, but in the face of higher energy costs, Chef Chris Koetke says that's changing. Koetke is the Vice-President of Kendal College, a culinary arts academy in Chicago, and host of the television show "Let's Dish."

As Koetke explains to KUAC volunteer Robert Hannon, his school has been looking at ways to make kitchens and restaurants more sustainable.
